This is a quick and easy version;
2 Boxes of Jiffy Cornbread Mix
3 Eggs
2/3 Cup Milk
1 Cup Oil split, I prefer canola/corn blend
1/2 Cup Sour Cream
1 Cup Shredded Sharp Cheddar Cheese
1 8oz. can Mexi Corn Drained
1 Med. Onion Diced Small
3 Large Pickled Jalepenos Chopped Small, I prefer it hotter so I add a couple more
Preheat oven to 350
Mix all ingrediants except 1/3 cup oil
Let sit 5 minutes
Add 1/3 cup oil to bottom of 10 1/4 cast iron skillet and evenly coat all sides
Bake on 350 for 40 minutes
Check with toothpick in center. When toothpick comes out clean its done.
