Terryaki Beef in Crock Pot 38799_450456476345_528366345_6566594_2527626_n

Ingredients:

(if you are cooking for just you and someone else, 3 lbs of meat is sufficient, I've used 6 but that's just because we're a family of 4 and we like leftovers) *this recipe is for double portions*

6 lbs. of Eye of Round Roast or London Broil (London Broil only when on sale cuz it's so expensive!) Round roast works just as good!

2 Stalks of celery chopped

4 bushels of baby portabello mushrooms chopped

1 spanish onion cut into rings

2 bunches of cilantro

(for meat marinade)
2 tsp. chopped fine garlic or pre chopped garlic.
3 tsp. pepper
3 tsp. lawry's season salt

2 bottles of Larwy's Terryaki marinade (with pineapple)
http://www.lawrys.com/Products/Marinades/Teriyaki.aspx
the good thing about this marinade is it has NO MSG! Also the sodium is way much lower than other marinades. With Mike's diabetes this instantly becomes a favorite dinner.

4 cups of plain white rice (or brown wild if you are trying to avoid carbs)

Cut the meat into bite size cubes
Get a big bowl and dump the meat into it
Pour the teriyaki marinade over meat
add garlic and spices
Mix with spoon and cover and refrigerate for at least 30 mins. The longer you marinate, the more tender and flavorful your meat will be. (I usually refrigerate overnight)

Cooking time 3 to 4 hours on high in crock:
Add meat and celery first on high and let cook for the first hour
I usually cook the mushrooms and onions in a deep pan first(I use a wok) to wilt them a bit so it's easier to put in the crock pot lol.
Add cooked mushroom and onion on hour 2.
Last hour throw in cilantro.

Cook rice as directed and keep on the side.
Hour 4 place rice on plate and spoon teriyaki steak on top.
Wallah dinner is served :D
