I found this in an ad from my local grocery store and had to try it. The results were delicious!
Recipe requires:
6oz spaghetti
2 tbsp olive oil
2 eggs well beaten
2/3 cup parmesan cheese (shredded or grated works)
1 cup ricotta cheese
1 cup of your preferred pasta sauce
1/2 cup shredded mozzerella
Toss cooked spaghetti in large bowl with olive oil. Mix in eggs and parmesan cheese. Form into crust in greased 10-inch pie plate.
Spread ricotta cheese over spaghetti crust then add pasta sauce. Bake for 25 min at 350 degrees. Sprinkle mozzerella over the top and bake about 5 min more. Cool about 10 min and dig in!
I also tweaked this recipe a bit to make alfredo pie. I skipped the ricotta cheese, replaced sauce with alfredo and mixed in some cooked cubed chicken. Both recipes were a big hit with my fiance and the coworkers I shared the leftovers with!
