Private party manu planning Empty
PostSubject: Private party manu planning    Private party manu planning EmptyNovember 29th 2012, 10:51 pm

Got a private party booked for 10 people coming up.
What should I charge for actually going to their house to cook everything?(just this fee alone)

The menu must be completely dairy FREE. No butter, no milk, no mayo, no cheese...no yum-yum sauce.....ect...no of that.

Basically want to give them 3 options to choose for each course....

Any ideas?....Throw them at me...

Here is what I've worked up so far...

Choose one for each course:

Salad
-Mixed field greens, dried cranberries, red grapes and Roma tomatoes,
Toasted garlic herb Crostini. Served with a Huckleberry balsamic vinaigrette

Huckleberry Farm House
-Our house recipe classic dressing, with multi-grain croutons,
Chopped romaine lettuce and sliced pears.

Iceberg Wedge
-¼ head of lettuce wedge topped with choice dressing crispy apple-wood smoked bacon, diced roma tomatoes and sliced cucumbers.

Entrée
-Lemon pepper chicken Tender, juicy grilled chicken breast with a lemon caper Vin Blanc sauce.
-Roasted fingerling potatoes
-Grilled asparagus’

-Garlic chicken and shrimp pasta
-Marinated grilled chicken and shrimp, sautéed with Andouille Sausage, green and red bell peppers
Tossed in a roasted garlic white wine Sauce over penne pasta. Served with sliced baguette bread.

Chicken Marsala
-Grilled chicken breast topped with sautéed mushrooms and Our Marsala wine sauce.
-Creamy Polenta
-Fresh seasonal vegetables

Voodoo shrimp
-Blackened’ seasoned sautéed shrimp, with a spicy Roasted red pepper Sauce.
-Served over seasoned rice or Creamy Polenta
-Fresh seasonal vegetables

Beef Steak Bowl
-Tender, marinated Grilled filet tips with Shiitake mushrooms, scallions and caramelized onions, served with seasoned rice and Chef Chaka’ sriracha sauce. (Over Noodles is also an option)

Dessert
Strawberry Shortcake
Seasonal Fruit K-BOB’s served with a simple Syurp

as always, thanks for your feedback Laughing

WOW all looks wonderful! If I had to choose....

Salad - Mixed field greens with the dried cranberries and balsamic

Entree - Lemon Pepper Chicken

Dessert - Strawberry Shortcake

Question, how would you do the dessert with no whipped cream?

How many hours will you be at their house and is there any prep work you're doing before you get there??

He's agreed to pay $100 fee to have me cook there. I guess 3 hours. I will prep most I can before I arrive.

$20 per person

He was happy with the selections. I am worried about the creamy polenta. I may make it with risotto, then baked it, then grill a 4x4 square per portion. we shall see.

These are both non-dairy Smile

Not to sure about the pricing especially for in home cooking Private party manu planning 713389 But 33$ and some change an hour sounds pretty damn good to me lol

My choices would be the same as Rooi's (except maybe Chicken Marsala instead) but they all sound so good!

Way to make a name for yourself Neon!

Sounds pretty good, Marsala without butter, interesting. We do a lot of risotto at work but use butter and Romano cheese. Polenta you can make ahead. Use a shhet pan, let it cool then use a cookie cutter, cut pieces then brush with olive oil and grill. No dairy at least.
