CREAMY ARTICHOKE DIP
1 can artichokes, quartered and drained
1/2 cup mayo
1 cup shredded monterrey jack cheese
Red pepper flakes to taste
Fresh ground black pepper to taste
Combine all ingredients in a mini-crock pot, setting on low/med until melty goodness ensues.
Serve with your choice of substantial dipper: Triscuits, Blue Corn Tortilla Chips, Pita Chips, toasted baguette rounds, etc.
